Well, Spring Break is over...waaah! I know, I know, most adults don't get school holidays off. If it makes you feel any better, I'm a contractor, so a week off work also means a week without pay! The great thing about the break was I had time to do some freeze-ahead cooking and try out some new recipes. Here's what we're planning on eating this week:
Monday
Lunch - Turkey Sandwiches
Dinner - Grilled Chicken Fajita Pasta (made ahead & frozen)
Tuesday
Lunch - PB&J
Dinner - Chicken & Broccoli Casserole (made ahead & frozen)
Wednesday
Lunch - Turkey Sandwiches
Dinner - Meatball Soup (made ahead & frozen)
Thursday
Lunch - Leftovers
Dinner - n/a (bowling league night)
Friday
Lunch - PB&J
Dinner - Chicken Noodle Soup Casserole (made ahead & frozen)

I wish I could get myself together enough to plan ahead like this... I know it would save me a lot of time and money if I could write up a menu on Monday and shop on Tuesday (usually my day off). Maybe this can be part of my micro-nesting.
ReplyDeleteAlso, just looked at that peanut butter oatmeal muffin recipe... I think I'm going to make them tomorrow or Sunday and try to fill them with blackberry jam. So excited!

ReplyDeleteIt helps to get your husband to buy in to the meal planning idea. Once mine realized dinner would be ready and waiting when he got home from work, he was more than happy to make the menu, make the shopping list for the week, and/or hit the grocery store for me!
